Fats and MFS - palm, palm kernel oil, coconut oils -are derived from tropical plants of the South-Eastern Asia, Africa and Latin America. Tropical oils are used in the production of fats for dairy, confectionery, bakery products, in soap. Fat is one of the most important raw materials for the production of oil and fat, meat and milk products. These are the products of virtually waterless mixture of different types of natural and processed fats.  MFS are produced by mixing and interesterification of fats mixture.

Fat - is an irreplaceable food ingredient, which is a structural element of food, the carrier of taste and flavor, concentrated source of energy of essential fatty acids (omega-3/omega-6), sterols, tocopherols, as well as the carrier of fat-soluble vitamins (A, D, E, K). High-quality substitutes of dairy fat are not competitors of the dairy fat, but an advantageous addition to traditional ways of dairy products production. MFS are aimed to repeat exactly physical indicators of milk fat, notably: the temperature of melting and solidification temperature, the content of solid triglycerides with appropriate temperatures and, as a consequence, have similar to dairy fats crystallization properties, good taste and flavor release of the finished products, the minimum adjustment of the technological parameters of production. The degree of replacement of milk fat in the ready-made products – is the question of formulation and always remains at manufacturer preference.
