Emulsion for carbonated and juice containing beverages

 
Fragrant emulsions, used to enhance the natural taste and aroma in the production of non-alcoholic carbonated juice drinks and soft drinks, as well as the creation of original and fantasy flavored compositions. The so-called water-dispersible flavors (or Emulsion) contain non-polar oil phase (usually citrus flavors, mostly lemon). This type of flavors is introduced into the soft drinks in the form of emulsions, which water phase may contain           hydrocolloids (gum-arabic Е414 or other gums). For the stability of the emulsion for a long time it is important for the particles of oil phase  to be of the certain size, the majority of which should be no mere than 5 microns.

The production of cloudy beverages on the basis of fragrant emulsions is promising and economically justified. Dosages are recommended, but can be corrected taking into account the taste preferences. Repeated and/or a significant excess of recommended rates can lead to a deterioration of the organoleptic properties of the final product due to high concentration of food flavorings, cloud emulsions, dyes, contained in the  emulsion composition.
